Salmon Salad


Ingredients

1 can salmon
1/4 cup low-fat miracle whip
1/8 cup cream cheese
1/4 cup chopped celery
1/4 cup chopped onion
salt/pepper
lemon and herb seasoning mix
1 tsp garlic

Directions

Mix all ingredients together and serve chilled.

Split Pea and Vegetable Soup


Ingredients

1 lb dry split peas
1 lb carrots sliced
1/2 cup chopped onion
4 celery stalks chopped
2 cans chicken broth
1 can filled with water
1 basil leaf
1 tsp garlic
garlic and herb seasoning mix

Directions

Mix all together and heat in slow cooker for 9-10 hours

Tabulouh Salad



Ingredients:

8 oz dry Tabulouh
2 medium sized tomatos chopped
1/2 large cucumber chopped
2 tbsp vegetable oil
parsley
salt
pepper

Directions

Measure out 1 cup boiling water and mix with tabulouh. Let sit in fridge for 30 minutes covered. Then add remaining ingredients and stir.

Cooking Creation: Russian-Fried Cabbage


Ingredients:


1 head green cabbage
1 tbsp canola oil
1 tbsp roasted garlic
1/2 cup chopped red onion
salt/pepper
2 eggs

Directions
1.  Chop green cabbage in slices. Chop onion.
2.  Heat oil in wok. Once oil is hot, add garlic and onion until translucent.
3.  Add cabbage to wok and season with salt and pepper. Continue heating until cabbage is browned.
4.  Beat eggs and add to cabbage. Continue to cook until egg is thoroughly cooked.

Cooking Creation: Pesto Tuna


Ingredients

1/2 tbsp pesto
2- 6oz tuna fillets
canola oil
salt/pepper

Directions
1.  Preheat oven to 450 degrees.
2.  Lightly coat the tuna fillets with olive oil and sprinkle with salt and pepper.
3. Bake 6 minutes.
4. Remove from oven and lightly coat with pesto sauce.
5. Bake again for 2-3 minutes.

Cooking Creation: Jerusalem Salad

So, its been a few days since a new recipe post, but here is one that is just delicous and easy to make.

Ingredients:

2 plum tomatos chopped
1 cucumber chopped
1/2 cup chopped onion

salt/pepper
2 tbsp tahini sauce
1 tbsp canola oil
3 tbsp red wine vinegar
1 tsp lemon juice

Directions:

1.  Chop and Mix all Vegetables Together in medium sized bowl.
2. In a seperate bowl, mix the tahini, canola oil, red wine vinegar, and lemon juice until evenly mixed.
3. Add dressing to chopped vegetables and mix until evenly coated.
4. Chill and Enjoy!

Cooking Creation Day 2: Herb Roasted Catfish

Really, simple and healthy way to prepare catfish. And delicous, if you do not have Adoba, any seasoned salt mix will work well I think.



Ingredients

1/2 tsp paprika
1/2 tsp Italian seasoning
1/2 tsp Adoba
4 oz Catfish fillet

Directions

1.  Heat George Foreman
2.  Sprinkle half of the seasoning on each side of the catfish.
3.  Place catfish on george foreman for 4-5 minutes each side, until fish flakes.

Cooking Creation Day 2: Zucchini Pizza

So, I chose this recipe because it sounded pretty interesting and comes out great! It's cheesy and yummy! :)


Ingredients

'Crust'

3 cups shredded zucchini
1/3 cup flour
3 larges eggs beaten
1/4 tsp salt

Toppings

1/2 cup chopped red onion
1/2 sweet pepper chopped
2 tbsp fresh basil
1/2 tomato chopped
1.5 cups shredded mozzarella cheese
2 tbsp parmesan cheese

Directions

1.  Preheat Oven to 350 degrees
2.  Mix 'crust' ingredients together and put in a greased 10-12 inch pie pan
3.  Bake 10 minutes
4.  Add Toppings
5. Bake 15-20 minutes, until cheese is golden brown.

Cooking Creation Day 1: Espinacas con Garbanzos (Spinach with Garbonzo Beans)

You will find with many of my recipes that I use a base of garlic and onion, I love the way the two flavors fusion.

Ingredients 

4 cups raw spinach
1 16oz can Garbanzo Beans
Pinch Salt
1/2 tsp Cumin
Pam Cooking Spray
1 tbsp minced roasted garlic
1/4 cup chopped red onion

Directions
1.  With a medium heat, add garlic and onion. Allow to cook until onions are translucent.
2.  Add Spinach, and cover for 3-4 minutes, until spinach is wilted. Sprinkle with 1/4 tsp cumin and salt if desired.
3. Drain and rinse garbanzo beans and then add to spinach. Add remaining cumin.
4. Allow to cook until thoroughly heated, about 2-3 minutes.
5.  Enjoy!!!

Cooking Creation Day 1: 7 bean soup

So today I made a Kedem Seven Bean Soup Mix. The soup mix packet comes with all of the beans and soup flavoring mix. It was really easy to make, I just followed the directions on the back of the packet, but I did cook it for about an hour longer than it said it needed. Meaning a total of 3 hours. But once I added the seasoning packet it smelled amazing!!
